Beetroot left in the ground past the first hard frosts turns woody and can split, but lifted now and packed into damp sand it keeps firm and sweet well into spring. It is a half-hour job for a modest row, and unlike potatoes it needs no curing period first — straight from the bed to the store.

What you need

Step by step

  1. Pick a dry day and push the garden fork in a hand's width outside the row, angled away from the root, then lever gently upward to loosen the soil.

    15 min
  2. Ease each root out by hand rather than pulling on the leaves, which tear before the root lifts.

    10 min
  3. Shake off loose soil but do not wash or scrub the roots — damp, bruised skin is where rot starts in store.

    5 min
  4. Twist the leafy tops off by hand, leaving a short 2cm stub above the crown rather than cutting into it.

    10 min
  5. Sort the roots, setting aside any that are split, soft, or larger than a tennis ball for using first — only sound, unblemished roots keep well.

    5 min
  6. Line a box with newspaper and lay a 3-4cm base layer of damp sand.

    5 min
  7. Set roots on the sand so they are not touching each other or the sides of the box, cover with more sand, and repeat in layers to the top.

    10 min
  8. Move the boxes to a cool, dark, frost-free place — a shed, garage, or unheated outbuilding — ideally between 1-4°C.

    5 min

Afterwards

Brush spilled soil off the fork and box handles before you put them away, since wet soil left on tines rusts them. Check the store every few weeks through winter and pull out any root that has softened or spotted before it spreads to its neighbours; top up sand that has dried out and shrunk away from the roots.

Questions

Can I just leave beetroot in the ground over winter instead?

In mild areas with free-draining soil you can, under a thick straw mulch, but waterlogged ground splits and rots the roots and mice find them easily. Lifting into a dry store is more reliable almost everywhere.

Why twist the tops off instead of cutting them?

Cutting close to the crown nicks the root and lets it bleed colour and sugars into the sand, which speeds up rot. Twisting by hand leaves the crown intact and the root heals over the small wound.

How long will stored beetroot actually keep?

Sound roots packed in damp sand commonly keep four to six months in a cool, frost-free store — through to around March.

What if I don't have sand?

Dry compost or coir works the same way. The aim is a material that holds a little moisture around the root without waterlogging it, not sand specifically.
